These delicious mid-sized golden potatoes work perfectly diced, mashed, or baked. Thin skinned with a rich flavor, these golden potatoes with become your favorite at dinner time.

Creamy Roasted Garlic Mashed Potatoes
- 1 Head Garlic
- 1 Tbsp. Olive Oil
- 3 lbs. Golden Potatoes, peeled and quartered (Like the skin on? Just give a wash!)
- 8 Tbsp. Butter
- 1 cup Heavy Cream
- Salt and Pepper to taste
- Preheat oven to 350 degrees F.
- Drizzle garlic with olive oil, then wrap in aluminum foil. Bake in preheated oven for 1 hour.
- Bring a large pot of salted water to a boil. Add potatoes, and cook until tender, about 25 minutes. Drain. Stir in butter, cream, salt and pepper.
- Remove the garlic from the oven and cut in half. Squeeze the softened cloves into the potatoes. Blend potatoes with an electric mixer or mash until desired consistency is achieved.
